I am looking at using a proximity switch rated for 20vdc and 200mA peak load. When this switch triggers, I want that to trigger a GPIO pin so that I can count plunger strokes on a small baler. If this works, I would like to add a second circuit to count bales. Bale weight might be nice, but I'm not sure i can figure that one out.

Based on this short description of your project I would say that an Arduino or ESP32 is much more suitable for you than a Pi. I just wanted to say that before you get too deep into a new project. A Pi can do it, but it's like buying a gaming desktop, opening the calculator, and pressing the enter key on +1 every time the plunger strokes.

An Arduino nano is like $4 from china and can count that, you can buy a little screw terminal shield for another $4 and then you don't have to solder. You don't have to feel bad if it dies. Programming is easier than Pi. The GPIO is 5v and more robust.
