I have been to several church pancake feeds where they kept the pancakes in a Nesco roaster. I couldn't tell you what the temperature was set on the Nesco. Pancakes aren't quite as good as fresh off the griddle, but acceptable.
When we to the Easter breakfast at my church, we keep toast in a metal pan in the oven, set on 200. I expect that would work for pancakes, too.
How to keep pancakes warm?
