We still make 50 gallons of cider every fall. When it starts getting too hard I add some mother from last years barrel. We use it for pickling in the fall and cleaning after that. I remember as a kid, the harder the cider got, the more time Dad spent in the fruit house where the barrel was. I was probably 12 before I "knew" why he stayed longer but never brought anymore to the house....James
