Unless you're going to host your own server (and maintain/secure/harden it) gMail is your best bet even though you don't trust them.  There are others out there like Proton and Zoho but for us common folk gMail is just fine.  You would probably be shocked how many custom email addresses use gMail even though they don't say @gmail.com.
