We had a local butcher experimenting with making bacon out of different parts of the hog.
In addition to jowl bacon, they made 'butt bacon', which was cut from the parts of the hams that had the streaks of lard through it similar to the belly. Turned out really good, and generally had more meat and less fat than the regular bacon.
