We used to travel all around the Yucatan many years ago. Would fly into Cancun, stay a week on the coast to snorkle and dive, then another week in a rental car driving aound staying in local towns and visiting Mayan Ruins.

Been many years ago now so my information is not current. Think the last time we were there was probably 15 or so years ago and that trip was mostly diving with little inner travel. Don't know what the safety situation is now.

All the agriculture we saw was basically slash and burn. Corn grown with vine crops in between mostly. Get down around Peto it is ranch land. Get out of the Yucatan state and in Chiapas and some orange groves and some tractors (45-60hp size) with larger farms. As you go further north towards Mexico City see more commercialized farming. Some ditch irrigation. Up along the gulf coast some rice and bigger machinery.

May have changed a lot since we were there. Traveled in that area for 8-10 years. Our first trip we actually drove from home all the way down to Corozol, Belize and back home. After that trip we just flew into Cancun on cheap air fare and rented a car. Early on a VW bug, later some other small compact car.

Never had a bit of trouble with any of the people out in the rural country. The big cities is where a person could run into trouble. We avoided any but talked to other travelers that had some problems.
