There's a group in our area that walks fields. They start with bean walking, move on to detasseling, then pick pumpkins for Libbys or Seneca. If it's slow they'll pick rocks too. They come up from Texas, organized by the same family for a couple generations.
They have a couple groups, 20-40 in a group. They provide port-a-pots, $20/hr/person, and they like to work full days. Do a good job too, better than the HS kids we've tried. Not sure how far south they go.
