I can't hold forth as any expert on "days vs. harvest" because you are so much further north than we are, and your days are longer right now.

If you were here in Wyoming, I think you could wait one, maybe two days. 

It is also a question of how tender you prefer the harvest to be - the more time you wait, the more fiber the plant puts into the stalks.
