Steaks don't need that much fat to taste good and be tender.

Yesterday I saw some "Wagyu" hamburger patties in the meat case at our local food co-op, they were almost white. Did not look very appetizing to me. The price was absurd. 

Looking for a different, higher-margin clientele than my all-grass Hereford burger I suppose.
