Subject: Controlling engine speed in sprayer pickup. Cruise control?

Texas/New Mexico Stateline
Specifically I have a 1 ton Dodge with a Cummins and 5 spd manual. I really like it for spraying but I have a hard time maintaining a constant speed. I like to spray about 10 mph which is about 1250 rpm in second gear. Would a universal cruise control system work? Like this:

Or would it not react right? I figure you might have to 'trick' it into thinking it was going faster than it was (with the settings) I don't know why it wouldn't work. Anybody else have this problem with pickup sprayers?
