I think that if it is still green(the heads have not begun to turn color)it won't affect palatability much, if at all. Can't help you as far as actual feed value, I would guess similar to other headed-out grasses, probably at least as good as oat hay.

If you can, be careful where you feed it, i'd bet that the seeds in those heads will germinate.
