We want to be able to quickly disconnect the sprayer, so I'm going to need to use some kind of electrical connector at the back of the tractor  (and leave the tractor-side of the harness connected to the battery). Anyone have suggestions for what connector we should use there, that is rated for 25A (required 21A plus margin)?

The Auxillary circuit on the 7 terminal light connector is rated for 25-40A depending on how tractor is fused.  Simple answer is to run power and ground to the 7 terminal light connector; ground to pin 1 and power to pin 7.  This provides the power you need with no extra connections.
