I don't think there would be any drift in angle on most but your rows will actually get closer or farther apart. Some Outback monitors had the option to choose a "3d" projection where a 0 degree line will always point at true north nomatter how many passes you move over (yes, this means you'll overlap as you move towards the poles and skip towards the equator) or a "2d" projection where it tries to keep your pass width constant (heading will slowly drift).
