I just canned a bunch of pears. All total it only made 12 jars. Peeling and coring the pears is what took so long. I just canned them in light syrup. Last year I made some jam with some pears. It tastes almost like apple pie with the cinnamon etc in it. So, I agree that it's often hard to tell the difference in apples and pears for taste after they are processed.
BTW, don't be afraid to try canning. I did it this year, and trust me, I'm no Martha Stewart here!!!
