Cynical answer: habit. It's relatively easy and comforting to get up every morning and milk and feed cows.
Why dairy is actually sometimes more profitable: maximizing resource utilization. Dairy is pretty good in terms of cash flow per acre. If land is your limiting resource dairy is pretty good. If you've got lots of land and not much labor then beef or row crops are better.
