Have to trust them. Those Delmhorst meters are the best, although I prefer the analog one so I can watch the moisture as I move in and out of the bale.

Things that will effect them...
Green stems. You can have 15% hay that is fine, but if the stems aren't completely dry and breakable that moisture comes out later and you now have 20% hay and a problem.
Grain hay. Same as green stems but the moisture comes out of the joints.
Bale density. Denser bales make them read higher. If you test a 1200 lb bale and its okay, and then bale the field at 1500lbs, you could have a real issue.
Dew moisture. At least in our climate on the desert, as long as the hay is actually cured out, dew moisture can read higher than you'd like, but will come out of the bale later on without burning the hay. Not like 25%, but if I'm making export hay that needs to be under 13%, and the dew gets heavy right at dawn, 15% is still ok so long as that hay was dry the previous evening.
