Number of cylinders doesn't have much to do with power or torque. Displacement can be whatever with any number of cylinders. The biggest factory displacement engine ever in a pickup was the 8.1 liter 496 cubic inch V8 from GM around 2001-2006.

Edit: I see what you are saying about using an existing design and adding two more cylinders. It would probably be more practical for GM to just increase the bore/stroke a little and bring it up to 7.5 or 8 liters.
