C TX | A good and affordable one we use is Amcrest cameras, got them all off amazon. They have a slew of options from wired to wireless, and all types of camera quality. They come with alerts for movements and can set it to only happen at certain times. Their newer cameras even come with human detection. They have both outdoor and indoor cameras and can all feed back to a single device for storage, or they can record to a card on the camera. For the remote locations with no wifi, you are going to need a cellular camera, which could get more expensive and have monthly fees, and will burn through data uploading it to the cloud. Have you looked at getting cellular enabled water tank monitors. Here is an example:
