It takes them that long to get the marbling we need (which customers require/expect).
We raise Wagyu, with a ROG of around 2#/day. Most people in the Wagyu business are taking their calves to 26+ months.
Cross breed Wagyu can be done in less time (maybe 22 months ave), but the marbling is usually a bit lower. (Still very good, but lower BMS scores than fullblood or purebred Wagyu.)
