We have a natural gas tankless. 2 teenagers and no trouble keeping up. Will flat put out hot water. We have a new house build and my only struggle is with efficiency and patience. When I want hot water I want it NOW… depending on the distance from the heater, and if you have a mani block pex system you can waste a lot of time and water waiting on it. Not that a tank type doesn’t have the same issue, but they are easier to run a loop/circulation pump and keep hot water moving closer to the source all the time, but then you are also burning more energy. There are timers and sensors and the like, but I never know exactly when I want hot water.

The simplest way that was pitched to me is to put a small electric under-sink 2 gallon water heater under each high use sink and then it’s near instant and covers you until hot water from the main heater gets there. BUT that’s another appliance/expense/maintenance/leak opportunity.
