Over the years I have enjoyed some good Jambalaya, Gumbo and Etouffee at some very nice restaurants. However, the best was made by ordinary people who had been making these dishes for a few generations. They could grab whatever they had available and prepare fantastic food.

I always enjoyed attending winter farmer meetings in southwest Louisiana. The farmer meetings in St Martinville usually had a really good jambalaya. A Deputy Sheriff would bring a van with prisoners from the St Martin Parish Jail to prepare the meal. I think the best gumbo was at the Knights of Columbus Hall in Kaplan, LA. A group of retired gentlemen would get together about 8:30 am to open the bar and start doing a gumbo in the adjacent kitchen. Together, these guys probably had 400 or 500 years' experience doing a gumbo.

You can teach people how to prepare average food. They have to learn how to prepare good food!
