its been a while..............but i used to make spanish rice with a little bit of butter and a can of enchilada red sauce and some minute rice in a stock pot. used to just boil the enchilada sauce, and butter, then add the minute rice and let it boil together for a short time and then cover and remove from heat, it usually took longer to absorb than water, but i remember it came out pretty good, and my kids ate the heck out of it. unfortunately that's all i remember how it goes. nowadays we have a rice cooker and the kids just love the rice out of it with chicken broth and other seasonings.
