If the numbers on the S680 correspond to the 9760 STS that I'm running, then you should be able to close the chaffer down to 12-15 and not have corn going out the shoe.  If corn is coming out like that then it is probably rotor loss and not associated with the sieves.  I found the previous recommendation to match the concave clearance to the diameter of an average cob to be good advice.
