We raise and milk Jerseys here.   Yes, the bulls can be mean but I would think he's castrate them and then they are fine.   We've had Jersey steers get to 1000 lbs and never had trouble.

And to echo what others said, Jersey meat is supreme and ours are raised on the cow until they are 9 months old, so lots of mothers milk.
