I doubt a S780 has a variable speed feeder house, more than likely a 5 speed. Which would really suck on an 8 row trying to slow down or speed up.
For that reason alone I’d get a 12row, and probably a folding for absolute convenience. A 12 row will put less hours on your combine so you can justify it a little than just the capacity you don’t need or want (think you want).
