Well, some of the dryer areas on the western edge of the Palouse region might be harvesting wheat, but this has been a cool wet spring so crops will probably be later than normal. Harvest normally starts near the end of July and into early August.
A trip on US 195 between Spokane Washington and Lewiston Idaho will put your right through the center of the Palouse Hills. You can branch off east and west to catch most of the area. Then in Lewiston go west on US 12 for some more really steep country and over Glenn W's home country.
