Why does monitor show as "blue" in photos?

Just happened to watch a You Tube video this morning that tried to explain all the compression and manipulation that is involved with pictures on a modern device such as a phone. I was aware of the compression schemes used with music such as the MP3 format. The idea is that the human ear can't distinguish certain frequencies etc. so eliminating them saves a lot of memory and the user is none the wiser.

From the video, I got the impression that something similar is done with pictures on a phone. From what little I understood, the raw picture is manipulated to a more reasonable size before it is saved. In most cases this is very acceptable to the human eye and much more manageable. This may result in the strange illusions we see such as the zebra strips when I take a picture involving a grain bin.
