Pork chops that come out of a 5000 head finisher are pale soft watery when raw and tough as nails when cooked even well. The pork industry shot itself in the foot by chasing chicken to be lean white meat and not just taste like pork should.

I don't know how your pork genetics are but I wish you luck fighting the pork boards misguided endever.
