Ever try making your own ground meat jerky. Son uses a jerky mix, I like a pretty plain jerky, marinade in W, black pepper and smoker until nearly dry and freeze. We grind most of the venison so make batches from frozen burger. We like elk burger better for cooking but do mix 1/2 and 1/2 for jerky too. I also like modern homemade pemmican too, and freeze.

4 pounds venison
1 pound pork or cooked bacon ground and mixed. Make into jerky. Grind with dried fruit of choice, lot of people use apricots, I like dried huckleberries. Press into loaf pans about 1" thick, slice....James
