Holly Springs, NC | Many Texas chilis do have beans in them. Chilis here that are beanless are usually put into the "firehouse" chili class. I've heard it is called that because the fire fighters that make it won't put beans in it so as to keep down on the releasing of gas and contributing to global warming :). That's what I've heard at some of the competitions I've been to but I could be wrong.
