Here's one of my family's favorites. This also is wonderful toasted for breakfast.
Pilgrim Loaf
3 1/2 - 4 cups flour (1/2 whole wheat flour)
1/2 cup cup corn meal
1 T. yeast
1 t. salt
1 cup warm water
2 T. each honey, molasses and oil
(substitute brown sugar for honey and or molasses if necessary)
1 1/2 cups cooked, cooled brown rice
1/2 cup nuts chopped

Mix the salt, honey, molasses and oil into the warm water. Sprinkle the yeast on top and stir. Let it stand a minute. Measure the white flour into a bowl. Pour liquid into the flour and stir until thoroughly mixed. Let stand 10-15 minutes. Add rice, nuts and whole wheat flour ( add the flour a cup at a time). Mix enough flour to make a stiff dough. Knead until the gluten is well developed. Let rise until double in size. Shape into desired shape and let rise again. Bake in preheated 400 degree oven until brown. 20-30 minutes.
I usually shape it into one big loaf. and place the corn meal on a cookie sheet, before I put the loaf on it.
