Gooseneck: pulls better, slightly more payload.
Bumper: easier and faster to hook up.
I don't know about the faster hitching part. Not being able to see the hitch ball on the bumper makes it more difficult for me, whereas with my gooseneck, I can see the ball right in the bed.
Goosenecks really do pull better, and are a lot easier to back up, too.
