I can always tell they are ready when they rattle like a rattlesnake when you walk through the rows. We were lucky this year as they were all around 12-13%. I wouldn't run them at 19% unless things got desperate as far as rain or flooding. Then you do what you have to and get all of them at the elevator instead of sitting in water.
