Possibly some one at Texas A & M at Commerce? They are not an excessive distance from the Experimant Station at Overton, where there is a good supply of knowledgable people.

Ether a cow calf or stocker enterprise should work, as long as the fences are good. More than likely a number of their neighbors do the same, with a day job plus run a few animals. This is the reason the average herd side less than 50 cows.

First things first would be to have a good forage program up and running. Probably coastal bermudagrass, or better yet Tifton 85 bermudagrass. Native range type grasses are thought to need less management but they do not take abuse very well.

With a little management they should be able to graze 12 months of the year. A little more management and average rains and they will not need to feed hay.
