IF you are doing it correctly, there is no problem.

You are selling them a butcher-ready steer. It's on the hoof and in your lot. That is all they are buying. As long as it isn't sick or diseased, you have no liability from that point on. To help my case, if it ever happens, I charge a small "delivery fee" to take their calf to the locker. I'm hoping that helps back my claim that they bought the calf in my lot, and it's theirs from that point on.

Once the ownership passes, prior to delivery to the locker, they are now the owner. Anything that happens after that is their responsibility.

As someone else said, the inspection at the locker plant should catch anything else.
