Had the same problem really bad until we installed tunnel ventilation fans 4 or 5 years ago. Cows still bunch a bit on the hottest days, not nearly as bad as before. We have also had them bunching because of flies, on hot days the cows will also bunch to get out of direct sunlight and get into the shade. It is a very aggravating problem, bunching is a response to stress, of course as they bunch up it causes them more stress, which only makes them bunch more. If your fans are under shade I'd split the cows up and gate them into separate areas. They might still bunch a bit but at least it will be less stressful for them than your whole herd in one big group.
