Wrap it. By the time the stalks are dry enough for dry hay the leaves will shatter badly. Best protein is to cut at bloom, first podset, max. Once it gets pods the protein starts dropping off really fast. I've seen some tests on podded beans, and they weren't that impressive, especially with the wheat straw mixed in, you'd probably be better off with corn or sorghum silage.
