When is yellow mustard ready to harvest?

I am just out side west of Winnipeg. We zero tilled the mustard in to an old fescue field and the mustard came nice. Then it turn wet and cold a lot of the mustard died and the fescue flushed back. So I just left the two of them because fescue likes it wet anyways. Now I have a mixture of tall fescue and mustard. the fescue is just about ready to be harvested for seed but the mustard is still pretty green. I know I can take to two apart in the cleaning plant. Just wondering if I knock the mustard down on the green side will it stay green or will the color wash out in the swath. I think I have more of a fescue crop then a mustard crop now.
