As Dave suggests it depends on the type of grass. Some grasses are better feed than others.
Also depends on the fertility the grass has.

I doubt his plan to feed dried clippings has much going for it. He will run out of clippings of starve the calf, unless he is in an area where something is growing year round.

Grass fat beef is different than feedlot beef. Good eating just different. Your friend might be well advised to kill the fatted calf when his grass runs out.
