I have been involved in a couple of feasability studies for natural/organic food. Thing is when people are asked if they will spend X dollars more for the "better" food they would be very agreeable. When the food hit the market and it was time to open the checkbook things changed dramaticly. Now that prices of everything have jumped that will become even more so.
