On just a very few acres, I'll plant a plowdown blend of alfalfa, sweet clover, & red clover with some oats or other small grain.

Harvest the grain.

Bale the straw.

Hope for good N fixxing from the legumes to make the soil better.

If it's a dry summer I'll graze the stuff. This requires some bloat management - basically I try to get 40% grasses in the mix (field road, oats regrowth, etc.) and be slow & careful.
