From the pictures I saw they were dairy animals, not real high quality meat from that breed or type of animal, mainly ground beef I would suspect.As to good quality mouth watering steaks, It takes a younger animal, I always butcher a yealing steer put them in on oats,pea and corn ration for a couple months and take them to a local butcher shop in Bowdon,ND. The butcher there always raves about our animals last one their he said the bones cut so nice and were soft and tender. We have cross breed simmental - angus herd with lots of carcass data on our herd sires and strongly believe this has been paying off for us. I see nothing wrong with butchering a animal with a broken leg or similar sort thing as long as it is done in a timely manner and the animal has not got a fever, but as to butcher a down cow thats something that shouldn't be allowed by USDA inspectors. I guess thats why I prefer home raised beef, sure feel sorry for the school lunch kids.
