Two weeks min, preferrably three.

As far as butchering a cow that's been on grass, that's your decision, but in my opinion, you would be better off selling her, and using the revenue to buy some good grain fed beef, steers, or heiffers. Most lockers procure grain fed beef for resale. Well spent money, vs having cow meat in the freezer. Take it for what it's worth.
