Subject: Aging grass fed beef


Driftless SW Wisconsin
I am going to butcher an older mostly grass fed cow for home use. Does aging the carcass improve the flavor or tenderness? Will be mostly hamburger with a few steaks. How long to age? I have heard a number like 21 days. This is a good older Hereford beef cow but just did not settle. Jim at Dawn
