I've never heard of a nerve in the bag. I've always cut as much as I can. I can't count how many I've knife cut this way. My feelings are as much bag as you can get the less chance of them getting scabbing over and not draining, thus getting infection. If you watch a vet ever cut open a animal( large cows or horses) they cut a fairly big hole to drain infection out of animal, so it doesn't scab over to fast and not drain.
