Knife cut, no mistakes, I'm guessing banding is 80% effective, I've had to do too many butcher jobs where you had half a nut with scar tissue tucked in the belly, and a staggy looking calf.
As far as weight, I don't see a problem with cutting 500 pounders, it's easier if they are smaller though.
