New Mexico
re beef cuts the past couple years is noteworthy.

50% lean trim: UP 158% over the 5 year average.
Briskets: UP 60+% over the 5 yr avg.
Short ribs: UP 55% over the 5 yr avg.
Chucks: UP 45% over the 5 yr avg.
Rounds: UP 36% over the 5 yr avg.

Total beef cutout is UP 33% over the 5 yr avg, Ribs up 30%, Loins up 17%.

Basically usa consumers have switched over time to more hamburger, and shifted more value to the lower priced beef primals.

This is a long term price value trend.
thus plenty of opportunity upcoming for hamburger beef production at decent money.

Retail avg beef prices:

1/20/012: $4.29 lb..
1/13/012: $4.27 lb..

12/23/011: $4.59 lb..

1/21/011: $4.07 lb..
