i have found there are very few people who have the freezer space to buy a whole carcass. I sell split halves only, about 100 lb of all cuts (minimum bone, lean trim, heavy on the good hamburger). This is about all most people can store. At $4/lb USDA inspected and frozen in the box it is much more affordable than a whole also. It is also profitable though I need to look at costs and reevaluate pricing this spring.

I do agree that extremely high prices for beef or corn or beans for that matter are not good for producers long term. Let's just be satisfied with a fair profit and be thankful for that. jmho.

edit: a "split half" is really a quarter - a half divided into two equal piles so everyone gets the same cuts
