Just taking an educated guess here but i would say right about now would be a good time. I don't know why you couldn't grow it in Iowa your neighbors to the west grow a lot of it and soft wheat to the east. Winter temps shouldn't be a problem because it is grown fron Noth Dakota down into Texas. There are markets in Minnesota most that take spring wheat also take winter wheat. They blend different classes together to get the type of flour they want.
