Northeast Louisiana | I feel your pain. We aren't through with all of our rice, and it's supposed to come right over us. Hopefully winds won't be too bad and lay our rice down.
I cut and saw cut a lot of down rice after Katrina. That MacDon will be your best bet. Stripper will not get all of the grain, and if you get it down too low in the stalks, they can wrap up around the drum. There's no quick way to cut your crop, unfortunately.
If you don't have the AFX rotor in your combine, you really need to consider one of the aftermarket auger front kits, Stewart steel, Lowen, or Kile. We've had the Stewart Steel kit for 4 years now and love it. I've not seen the Kile in person, but I think you can put it on with the rotor still in the machine. Also go with full rice spikes on the specialty rotor if it doesn't have them already. It will cost some money and a day's time to put this stuff on, but if you have very many acres of down rice, it will pay for itself this year. The AFX style rotor front makes a dramatic difference with green material.
